Caramelicious

Rémi Tremsal began his career as a jockey but, after a back injury, he started to make traditional French salted butter caramel, following a recipe handed down from his father.  After some positive reviews, Rémi and his wife Breena decided to launch Caramelicious and began selling their caramel at local markets. Initially, salted caramel was new to Australia and took a while to catch on, but when it did, the change was almost overnight.

From their small beginnings Caramelicious now offer a range of caramel sauces, including coffee, vanilla and cocoa.  The exceptional quality of their products has also seen them win numerous awards; including being voted Australia’s best salted caramel sauce by Gourmet Traveller in 2018.  Today, Caramelicious export to Dubai, Hong Kong, New Zealand, Japan and even Bahrain and are still as passionate about sourcing the best and freshest ingredients to make their caramel … and, perhaps most importantly, they still use that traditional French family recipe.

How is Caramel Made?

Caramel is made by heating sugar (sometimes along with a small amount of water) over a high heat until the it begins to change colour (effectively, it starts to burn).  Initially, the colour change will only be slight, but it will begin to change more quickly as the sugar is heated further.  Once the desired colour is reached, the caramelised sugar is removed from the heat and cream and/or butter are quickly incorporated, giving the finished caramel.  Salt flakes (as well as other flavours) are sometimes added to caramel to give contrast and other layers of flavour.
